When considering side dishes or salads, we often overlook how simple ingredients can be both delicious and satisfying. There doesn’t need to be a long, unique list of ingredients or complex techniques to create something that pleases everyone at the table.
Refreshing and palate cleansing, this recipe goes really well as a side dish to these Cuban Style Black Beans and this Vegetarian Cuban Picadillo. The hint of heat from the red pepper flakes is perfectly balanced by sweet mango and cooling cucumber, while creamy avocado ties it all together for a luscious bite.

Perfect Summer BBQ Side
If you're looking for a recipe to make for your next summer BBQ or tropical luau party, this Mango Avocado Cucumber Salad is a great option with readily available ingredients, especially during the spring and summer months. You can easily prep all of your ingredients ahead of time (minus the avocado) and make a bigger batch of the Honey-Lime Vinaigrette to serve on the side. When you're ready to serve, chop the avocado and spritz it with fresh lime juice. Be sure to coat the avocado alone to help prevent oxidation and browning. The vibrant colors will make a statement and stand out among your spread of foods.
Storage
Without avocado: The salad base (mango, cucumber, etc.) can be stored in an airtight container in the fridge for 2-3 days. After that, the freshness starts to fade, and the texture may change.
With avocado: Once the avocado is added, the salad is best enjoyed the same day, as the avocado tends to brown quickly. If there are leftovers with avocado, remove the avocado before storing it, and keep it in an airtight container for 1 day.
To maintain the freshness, be sure to remove the avocado from the original serving if storing leftovers. When ready to enjoy, simply add fresh avocado and a bit of extra dressing to bring it back to life!
