These aren’t your usual rice krispie treats with some strawberry thrown in… nope, this recipe takes a classic favorite and makes it even better. By better, I mean real strawberries (no red dye here!) and a few simple, nourishing ingredients, including puffed quinoa that add a little extra goodness (and protein) to every bite.

Rice Krispie treats are a satisfying sweet treat that are so easy to make. Just a couple of ingredients, and in less than 30 minutes or so, you can be biting into these gooey little squares of bliss. Most Rice Krispie recipes are gluten-free, which is great for those who have allergies or a gluten intolerance. While these treats are called "Strawberries & Cream Rice Krispie Treats," there’s no actual dairy cream in the recipe. The name reflects the creamy texture created by blending the strawberry into the marshmallow, giving it that classic strawberries & cream flavor without any dairy involved. It’s all about that sweet, creamy taste in every bite!

Puffed Quinoa: A Crispy Superfood with Big Benefits

In addition to the Brown Rice Cereal I used Puffed Quinoa is this recipe. The Puffed Quinoa has a nuttier taste and is more firm than the Brown Rice Cereal. I added a greater amount of Brown Rice Cereal to Puffed Quinoa so that they would keep more of their airy texture.

So what is Puffed Quinoa? Puffed quinoa is quinoa that has been heated until it pops, creating a light, crispy texture. Puffed quinoa still retains many of the same nutritional benefits as regular quinoa, though it may have slightly less fiber due to the puffing process.

Puffed quinoa is a complete protein, containing all nine essential amino acids, making it an excellent high-protein snack. Strawberries & Cream Rice Krispies Treats

Ingredients
  

  • 5 tablespoon Unsalted Butter
  • 3 cups Brown Rice Cereal
  • 2 cups Puffed Quinoa
  • 1 bag Mini Marshmallows 10oz
  • 5 tablespoon Freeze-Dried Strawberries, ground

Instructions
 

  • Start by grinding up a cup of Freeze-Dried Strawberries. Run the ground strawberries through a mesh sieve to remove any larger bits. You'll need about 5 tablespoons of the strawberry powder at different points in the recipe.
  • Grease a 9x9 Sqaure Baking Pan.
  • In a large bowl, measure and add your brown rice cereal and puffed quinoa. Mix to combine.
  • In a large pot, melt the butter over medium heat until it’s completely melted. Add ¾ of your marshmallows to the butter, saving the rest for later. Stir the marshmallows into the butter until they’re well-coated and begin to melt. Lower the heat.
  • Once the marshmallow is melted and fully combined with the butter, it should be fluffy and creamy in texture. Whisk or stir in about 3-4 tablespoons of the strawberry powder into the marshmallow mixture. Make sure to stir well so there are no lumps.
  • Turn off the heat and adds your cereal/quinoa mixture to the pot of strawberry marshmallow cream. It will be sticky, but stir well. Add a handful of extra mini marshmallows to the mixture and stir.
  • Pour the entire mixture into the greased pan and push down so that it fills the entire pan evenly.
  • Top with the remaining mini marshmallows and sprinkle additional strawberry powder on top.
  • Allow the rice krispie treats to cool completely. Slice into squares. I cut mine into 9 larger squares, but you can opt to cut in to smaller pieces.
