This White Christmas Coconut Mojito recipe feels so right for so many reasons. For one, we haven’t had an official white Christmas here in 15 years, and this year ended that with a magical couple-inch snowfall just prior to the holiday. Two, this drink combines holiday and tropical vibes. Coconut… need I say more? Cheers, I mean, Mele Kalikimaka! 🌴

Mojitos are a great classic drink, and I love that you can mix up a big batch in a pitcher—perfect for parties. This is especially handy when you have a larger group of people coming over for the holidays. You can prepare all the ingredients for this White Christmas Coconut Mojito recipe ahead of time and leave extra garnishes on the side, so guests can help themselves. It’s a win-win: your guests enjoy a fun and delicious cocktail, and you get to relax and enjoy your holiday!

To keep with the theme of laid-back island vibes—and to give you more time to enjoy the party instead of serving individual drinks—this coconut mojito uses just a few ingredients, including one helpful shortcut.

Ingredients

The base of a classic mojito includes rum, lime, mint, sugar, and soda water. This White Christmas Coconut Mojito recipe takes those essentials and adds creamy coconut and some other ingredients for a tropical holiday twist!

White Christmas Coconut Mojito

Celebrate the holidays with a White Christmas Coconut Mojito! Creamy coconut, mint, and lime make this festive cocktail a refreshing holiday delight.

Equipment

  • 1 48 oz Glass Pitcher

Ingredients
  

  • ½ bottle Simply Limeade or Similar 52 oz
  • 1 cups Cold Water
  • ½ cup White Rum
  • 1 can Coconut Milk goya
  • ¾ cup Fresh Mint Leaves Chopped
  • 4-6 Limes
  • 1 Pomegranate or Pomegranate seeds
  • 1 bottle Club Soda

Instructions
 

  • Cut 3-4 limes into small wedges, roughly chop mint leaves, and add both to your pitcher.
  • Using a muddler or back of a wood spoon, muddle the mint and limes together.
  • Add the Cold Water, Coconut Milk, Limeade, and White Rum to the pitcher. Mix well. If serving immediately add lots of ice and extra garnishes: pomegranate seeds, extra whole mint leaves, and slices of Lime.
  • Leave Club Soda and additional garnishes for guests to top off and add to their own individual drinks as needed.

Notes

-This recipe is an approximate for the size pitcher I used.  Taste and adjust as needed.  Always start with a little less Rum and add more if preferred. 
-Bottled Limeade is already very sweet, I opted to use some water to dilute the sweetness but add more limeade and reduce the water amount if you rather the drink to be sweeter.
-Leave the alcohol out completely for a fun, festive, mocktail for all to enjoy!
