Instructions
Green Apple Farro Salad
Cook the farro. Prepare farro according to package directions. Drain, rinse, and cool completely.
Add chopped romaine to a large serving bowl or platter.
Scatter fresh baby spinach, mixed greens, and cooled farro over the lettuce.
Arrange green apple slices evenly across the salad.
Sprinkle with gorgonzola dolce.
Top with marcona almonds for crunch.
Drizzle with the Green Apple Vinaigrette just before serving, tossing lightly to coat. A simple store-bought vinaigrette can be used if preferred.

Notes
To get fresh green apple juice, grate a small piece of apple using a microplane or the small holes of a box grater, then squeeze it in your hand or press through a strainer. You only need a tablespoon or two, so one of the apples you’re already using for the salad is usually enough.If you prefer to skip this step, simply make the vinaigrette without the apple. It will still be balanced and delicious. A small splash of store-bought apple juice can work in a pinch, but fresh gives the cleanest flavor.As a side dish, this Green Apple Farro Salad serves 4-6, but as a main course, it will serve about 2-3.
