This popping boba drink recipe is a light, tropical mocktail made with mango popping boba, coconut water, pineapple juice, and sparkling water. Refreshing, fizzy, and fun, it’s perfect for New Year’s celebrations, summer gatherings, or anytime you want an easy, non-alcoholic drink with a tropical feel.

⅓cupmango popping boba pearls

Instructions
Divide the mango popping boba evenly between two clear glasses, adding the boba directly to the bottom of each glass.
Fill each glass with ice and set aside.
In a shaker, combine the pineapple juice and coconut water with ice. Shake briefly, just until well chilled. This step smooths the flavors and ensures a crisp, refreshing finish.

Notes
Optional New Year’s “Ball Drop” Moment
For New Year’s Eve, build the drink as usual with the boba at the bottom. Just before midnight, add some extra mango popping boba pearls on top of each glass. Make a wish and let them sink as the clock strikes twelve, a playful mini ball drop with a golden mango glow that feels right at home for fresh beginnings.
To make this a cocktail
Add 1 to 1½ ounces of coconut rum or vodka per drink, depending on how strong you like it, stirring in before topping with sparkling water.
Don't Have Popping Boba?
If popping boba isn’t available, swap in fruit pearls, cut fruit, lychee jelly, nata de coco, or softened jelly-style gummies (Albanese). The drink will still be festive and delicious.
