Red, White & Boba Sparkler (Easy Patriotic Mocktail Recipe)
When I set out to create a patriotic mocktail recipe, I wanted something festive without relying on artificial food dyes. The result was this Red, White & Boba Sparkler—a playful red, white, and blue drink made with strawberry popping boba, creamy coconut milk, blue spirulina star ice cubes, and bubbly soda that's perfect for summer celebrations.

½cupstrawberry popping boba
1cupcanned coconut milkshaken well
2cupscold water
1620 ozchilled 7-Upplus more for topping/preference
24-32blue star ice cubes
Instructions
Make the blue star ice cubes. In a small measuring cup or bowl, whisk together the coconut water, pineapple juice, water, and blue spirulina until fully combined. Use a squeeze bottle or dropper to fill star-shaped silicone molds. Freeze until solid, at least 4–6 hours or overnight.
Assemble the drinks. Add 2 tablespoons of strawberry popping boba to the bottom of each 12-ounce glass.
Pour about ¼ cup of coconut milk into each glass over the popping boba.
Add 6–8 blue star ice cubes to each glass.
Top with 4–5 ounces of chilled 7-Up.
Garnish with festive paper straws or drink picks if desired and serve immediately

Notes
Place silicone molds on a small baking sheet or aluminum tray before filling to make transferring them to the freezer easier.
A squeeze bottle, dropper, or food-safe syringe makes filling small star molds much less messy.
If you don't have blue spirulina, you can substitute a few drops of blue food coloring.
The blue star ice cubes can be made up to 1 month in advance and stored in a freezer-safe container.
For a cocktail version, add 1–2 ounces of coconut rum, white rum, or a combination of both to each glass before adding the 7-Up.
As the star ice cubes melt, they'll slowly add a tropical coconut-pineapple flavor and create a more vibrant blue swirl throughout the drink.
