A light and refreshing watermelon feta salad tossed with fresh mint and lemon dressing. The perfect sweet and salty side for summer gatherings, BBQs, and showers.

Ingredients
1smallSeedless Watermelon, cubed*Yields 4-5 cups
¾cupFeta Cheese, crumbled
1bunchFresh Mint, chopped
Realest Lemon Vinaigrette
3tablespoonextra virgin olive oil
1tablespoonred wine vinegar
1tablespoonfresh lemon juice
1teaspoonhoney
1garlic clove, minced
sea salt
black pepper
Instructions
Prep the lemon vinaigrette by whisking all the ingredients together, then refrigerate until ready to serve.
Cube the watermelon into evenly sized pieces and add to a platter or bowl.
Top the watermelon with the mint and feta. Toss together so mixed and incorporated.
Right before serving, drizzle the Realest Lemon Vinaigrette evenly over the salad and toss gently. Or keep the dressing on the side to drizzle over individual servings as desired.
Notes
As a side dish, this Watermelon Feta Salad serves 4-6, but as a main course, it will serve about 2-3.
