Rice is such a staple when it comes to side dishes, and this recipe is a fairly familiar one. You see it on menus at different chains and restaurants, but can easily replicate it at home. Not to mention, it allows you to control how much of what flavors you want to come through most. Make this Cilantro Lime Rice as your next side dish for a bright, flavorful experience for you and your tastebuds.

Cilantro Lime Rice

Do you struggle sometimes with not knowing what to eat for your main dish, but also the sides? It's always this balance of making sure the main and side pair well, but also that it rounds out your meal. This recipe is on rotation in our house, especially when we make our Vegetarian Tacos for our main, chefs kiss 😚 combination. The best part is I use my trusty rice cooker so while it does its thing, I can prep all my toppings and finish making my main course.

Storage

Cooked cilantro lime rice can be stored in an airtight container in the refrigerator for up to 4–5 days. To maintain its freshness, let it cool completely before storing. When reheating, you can add a splash of water or lime juice to help restore its moisture and flavor.

Cilantro Lime Rice

Cilantro Lime Rice

Bright, fresh, and zesty, Cilantro Lime Rice is the perfect side dish to elevate any meal. With fragrant cilantro and a tangy kick of lime, this easy recipe adds a refreshing twist to your favorite dishes.

Ingredients
  

  • 1 ½ cups White Long Grain Rice, dry (approximately 4-5 cups cooked)
  • 1 Lime, zest and juice
  • ¾ cup Cilantro, rinsed and chopped
  • Salt

Instructions
 

  • Measure and rinse the white rice and follow your rice cooker instructions for water amount and cooking setting. If you're cooking the rice on your stovetop, you will need about 3 cups of water to cook 1 ½ cups of rice.
  • While the rice is cooking, rinse and prepare your cilantro and lime.
  • When the rice is finished, fluff the rice and add the zest of one lime, chopped cilantro, and add the juice by the tablespoon. I like to add a couple tablespoons and stir well. Make sure everything is incorporated evenly. Salt and add additional lime juice as needed.

Notes

-This recipe is the amount I make for a side and will serve about 4-5 people as a side dish portion.
-Don't add all of the lime juice at once or it could be too much liquid to rice ratio.
