A recipe with a thousand steps or a ton of ingredients is not the only surefire way to create something delicious. With this recipe, it all comes down to really simple, really fresh ingredients that combined make the ultimate dip or topping to endless other recipes. This easy Pico De Gallo reminds us how simplicity can truly shine.

Easy Pico De Gallo

Use this pico de gallo as a fresh topping for vegetarian tacos or to cascade over the best Vegetarian Loaded Nachos and you’ll see how much these few ingredients can wake up any dish. 

I chop up all of the ingredients and season them, but I believe this is the type of dish that continues to get better as the ingredients meld and marinate together. If prepping ahead is your thing, feel free to whip this up a couple of hours before you need it and keep it in the fridge to allow the flavors to develop. Naturally, if you make this ahead, you can expect more juice from the vegetables. If using this as a topping, just skim the top and drizzle some of the liquid for an extra punch of fresh flavor, if desired.

Storage

To store pico de gallo, place it in an airtight container and refrigerate. It will last for about 2 to 3 days, as the ingredients are fresh and can start to lose their texture after that time. If you’ve made it ahead and notice extra liquid from the vegetables, you can drain some before storing to help keep it fresh longer.

Ingredients
  

  • 5-6 Roma Tomatoes, seeded and chopped
  • 1 Small Onion, chopped
  • 1 clove of Garlic, minced
  • ½ cup Fresh Cilantro Leaves, chopped
  • 3 tablespoons Fresh Lime Juice
  • 2 Jalapeño Peppers, seeded and minced
  • Drizzle of Honey
  • Salt
  • Black Pepper

Instructions
 

  • Add the chopped onion, garlic, jalapeños, and cilantro to a medium-sized bowl. Pour the lime juice, honey, salt, and pepper over the top. Stir well and let the flavors develop while prepping the other ingredients.
  • Chop the tomatoes and add them to the bowl with the rest of the ingredients. Stir well to ensure the ingredients are evenly mixed. Adjust salt and pepper as needed.
