Looking for some variation from the usual Rice Krispie Treat? Not only are these Lucky Charms Marshmallow Treat Bars a sweet and gooey treat, but they also get a boost of protein from puffed quinoa. Now you really can have your treats and eat them too!

These treat bars delight with their pops of fun neon colors from the Lucky Charms Marshmallows. Unlike traditional Rice Krispie Treats, which use Rice cereal and mini marshmallows, this recipe used Lucky Charms Cereal as the base for the treat squares.

With the addition of puffed quinoa, we turn this classic sweet treat into a protein-packed, healthier alternative. Not saying you should eat an entire sheet (though we wouldn’t blame you!), but at least this version offers a little extra nutritional boost with every bite. Storage

Lucky Charms Marshmallow Treat Bars

These colorful Lucky Charms Marshmallow Rice Krispie Treat Bars are a fun, protein-packed twist on the classic sweet treat! With a boost of protein and fiber, they offer a healthier take on the nostalgic, gooey, and crunchy favorite while still delivering that magical marshmallow goodness.

Ingredients
  

  • 4 tablespoon Unsalted Butter
  • 5 cups Lucky Charms Cereal *Both Cereal and Marshmallows
  • 2 cups Puffed Quinoa
  • 1 bag Mini Marshmallows 10oz

Topping

  • Additional Mini Marshmallows
  • Additional Lucky Charms Marshmallows

Instructions
 

  • Grease a 9x9 Sqaure Baking Pan.
  • In a large bowl, measure and add Lucky Charms cereal and puffed quinoa. Mix to combine.
  • In a large pot, melt the butter over medium heat until it’s completely melted. Add ¾ of your marshmallows to the butter, saving the rest for later. Stir the marshmallows into the butter until they’re well-coated and begin to melt. Lower the heat.
  • Once the marshmallow is melted and fully combined with the butter, it should be fluffy and creamy in texture.
  • Turn off the heat and adds your cereal/quinoa mixture to the pot. It will be sticky, but continue to stir well. Add a handful of extra mini marshmallows to the mixture and stir.
  • Pour the entire cereal-marshmallow mixture into the greased pan and push down so that it fills the entire pan evenly.
  • Top with the remaining mini marshmallows and sprinkle additional Lucky Charms Marshmallows on top.
  • Allow the rice krispie treats to cool completely. Slice into squares. I cut mine into 9 larger squares, but you can opt to cut in to smaller pieces.
