Tips

I suggest making one big batch of this Royal Icing and using it as your base. You can take it and add smaller scoops of the icing to small mixing bowls to add in colors as needed.

Cover the Royal Icing with a wet, clean dish towel or Saran wrap between mixing and using colors so that your main batch of icing doesn't form a shell or dry out.

Use piping bags or small bottles to pipe designs onto your cookies.

Be sure to allow enough time to wait for your cookies to cool prior to decorating with icing.

In addition, expect to give the finished cookies an hour or two to fully dry before storing them away to reduce the risk of cracking or breaking the icing decoration on top.

If you will be stacking your decorated cookies, place sheets of parchment between each layer to prevent the cookies from sticking together.

  • Use the main bowl for the white icing and create smaller bowls to mix batches of different colors using the gel or other food coloring.
  • Add your icing to piping bags or bottles to decorate cookies.
