I love a meal that is not only satisfying but super refreshing for the season. And while I’ve definitely Googled “poke bowl near me” more times than I can count, nothing hits quite like making this one at home. I look forward to these Watermelon Poke Bowls as soon as the temperature starts to heat up. Not only are they delicious, they’re a total feast for the eyes. Just check out all those vibrant colors, drizzled in a creamy, spicy dressing. So go on, stop scrolling and start chopping.

Poke bowls, pronounced "poke-eh" (rhyming with okay), are more than okay for a meal or snack. This watermelon poke bowl is a simple, refreshing twist on the classic, and best of all—there’s no marinating required. It speeds things up without sacrificing flavor. The only real work here is chopping your bowl ingredients and whipping up a quick, spicy dressing. I know I sound like a broken record, but the prep is totally worth it. The colors, textures, and fresh bite make this vegetarian poke bowl a stunner, and I love how customizable it is. Every bite can be exactly what you want it to be.

And while there are plenty of poke spots popping up these days, the vegetarian options aren’t always that exciting or even available. That’s part of what inspired this bowl. When the craving hits and nothing local feels quite right, this easy poke bowl at home checks all the boxes. It’s bright, fresh, flexible, and just as satisfying without any fish. I’ve had melon poke bowls where the watermelon is marinated first, but I kind of love that in this version, the watermelon stays untouched. It brings that juicy, sweet flavor profile and doesn’t compete with the spicy dressing. It totally owns its spot in the bowl.

For a little crunch and a boost of plant-based protein, we topped it off with black sesame seeds and a sprinkle of hemp seeds too.

Totally depends on what you put in them—but they can be a super balanced and feel-good meal. Our version is loaded with fresh, colorful ingredients that bring both flavor and health benefits to the bowl:

Watermelon – hydrating, light, and full of antioxidants

Carrots – great for skin and eye health

White rice – comforting, energizing carb (and easy on picky eaters)

Avocado – full of healthy fats and super satisfying

Cucumbers – refreshing, hydrating, and crunchy

Black sesame seeds – packed with minerals and a nutty crunch

Hemp seeds – tiny but mighty with protein and omega-3s

You can always mix and match your base and toppings depending on what you're craving or what’s in the fridge.

How Long Does a Homemade Poke Bowl Last in the Fridge?

Not super long since it’s fresh ingredients. Cut watermelon will keep about a day or two, so best to eat it sooner. Keep all the toppings separate in the fridge to stay fresh. When you’re ready to enjoy leftovers, just reheat the rice before putting it all back together. That way, everything tastes its best.

Ingredients
  

Poke Bowl Ingredients

  • 4 cups cooked white rice * 1½ uncooked rice
  • 2 cups diced watermelon
  • 2 medium carrots shredded or thinly sliced
  • 1 large avocado diced
  • 1 cup cucumbers chopped
  • 1 cup thinly sliced radishes
  • 2 cups Lettuce chopped
  • 2 tablespoon black sesame seeds
  • 2 tablespoon hemp seeds

Spicy Mayo Dressing

  • ½ cup mayonnaise or vegan mayo for dairy-free
  • 2 tablespoons sriracha adjust for heat preference
  • 1-2 teaspoon Rice Wine Vinegar adjust for desired consistency
  • 1 teaspoon honey optional for sweetness

Instructions
 

Bowl Instructions

  • Prepare white rice using a rice cooker or stovetop. Let it cool slightly while you prep the other ingredients.
  • Prepare the Spicy Sriracha Dressing: In a small bowl, combine the mayonnaise, sriracha, rice wine vinegar, and honey (if using). Whisk until smooth and fully blended. Taste and adjust the heat or acidity as you like. Set aside.
  • Chop and shred all poke bowl ingredients according to the amounts listed. Only cut the avocado just before serving to keep it fresh.
  • Assemble each bowl starting with a base of rice. Arrange watermelon, cucumbers, carrots, radishes, avocado, and your crunchy toppings like black sesame seeds and hemp seeds in sections around the bowl. Drizzle with spicy sriracha dressing or your favorite sauce, then enjoy!
