Prep your garnishes: sliced limes and cucumber ribbons. Reserve the other cucumber for cutting up small pieces of the cucumber for muddling inside the mixer.
Juice the lime and pour 1 oz into the mixer. Add enough ice to just cover the bottom. Place ¼ cup of chopped English cucumber over the ice. Pour in 2-3 tablespoon of Zero-Proof Gin, adjusting to your preferred taste and sweetness. Add a slice of lime and muddle the ingredients together well. Cover and shake well.
To prep your glass, take a ribbon or two of the cucumber and lay it around the inside of the glass. Fill the glass with ice.
Pour the cucumber, lime, and zero-proof gin mixture into the glass first. It should fill about a ¼ to ⅓ of the glass. Top off with Topo Chico Mineral water or similar.
Stir and taste. Adjust sweetness by adding plain agave if desired.
