White Chocolate Coconut Ice Cream Cookie Sandwich (Biscotti Gelato Style!)
Enjoy these homemade biscotti gelato-inspired ice cream sandwiches with creamy coconut gelato and rich white chocolate chunks. A perfect balance of soft, buttery cookies and smooth gelato for a refreshing, indulgent treat.
Once the cookies have cooled completely, place a scoop of coconut gelato in the center of one cookie, then gently press another cookie on top to form a delicious ice cream sandwich.
Roll the exposed coconut gelato of the sandwich into shredded coconut to fully coat the seam and add a touch of tropical flavor.
Repeat this until you have finished making all of the ice cream sandwiches. Be sure to put each finished sandwich inside the freezer to stay chilled while assembling the rest.
