What’s better than one buttery, delicious coconut cookie? TWO! Even better—a White Chocolate Coconut Ice Cream Cookie Sandwich, with creamy coconut gelato nestled between two golden cookies and coated in delicate coconut shreds for the perfect bite every time.

What is Biscotti Gelato?

Simply put, it’s my crunchy Marcona coconut cookies with creamy coconut gelato sandwiched between—an Italian-inspired spin on the classic ice cream cookie sandwich. Now that you’re on board, let’s make some magic!

I know I’ve said this so many times, but coconut is something I can never get enough of. It’s the perfect mix of creamy and rich, and it pairs so well with so many flavors. The White Chocolate Mar-Coconut Cookies already highlight coconut, but the coconut gelato takes it to a whole new level.

I decided to use coconut gelato in this recipe because its texture and creaminess are the perfect match for these cookies. The gelato melts into the cookie, creating a unique experience where the flavors blend together beautifully without overpowering the chewy, coconut-filled cookies

In Sicily, and other parts of Italy, they have Brioche con Gelato—where a soft, buttery brioche is cut in half and filled with a scoop of fresh gelato. While our cookies aren’t as soft as the brioche, they’re buttery and nutty, thanks to the Marcona almonds and caramelized coconut baked right into the cookie. It’s a delicious twist that brings together the best of both worlds.

White Chocolate Coconut Ice Cream Cookie Sandwich (Biscotti Gelato Style!)

Enjoy these homemade biscotti gelato-inspired ice cream sandwiches with creamy coconut gelato and rich white chocolate chunks. A perfect balance of soft, buttery cookies and smooth gelato for a refreshing, indulgent treat.

Ingredients
  

  • 24 White Chocolate Mar-Coconut Cookies *Get The Recipe Here
  • 1-2 pints Coconut Gelato *see notes
  • shredded coconut

Instructions
 

  • Bake The White Chocolate Mar-Coconut Cookies.
  • Once the cookies have cooled completely, place a scoop of coconut gelato in the center of one cookie, then gently press another cookie on top to form a delicious ice cream sandwich.
  • Roll the exposed coconut gelato of the sandwich into shredded coconut to fully coat the seam and add a touch of tropical flavor.
  • Repeat this until you have finished making all of the ice cream sandwiches. Be sure to put each finished sandwich inside the freezer to stay chilled while assembling the rest.
  • Once all the ice cream sandwiches are assembled, store them in a freezer-safe, airtight container to keep them fresh and ready to enjoy.

Notes

Depending on how many ice cream sandwiches you plan to make, the size of each cookie, and the amount of gelato per sandwich, the number of pints of coconut gelato you'll need may vary. But hey, a little extra gelato leftover never hurt anyone, right?
