I know I’ve said this so many times, but coconut is something I can never get enough of. It’s the perfect mix of creamy and rich, and it pairs so well with so many flavors. The White Chocolate Mar-Coconut Cookies already highlight coconut, but the coconut gelato takes it to a whole new level.
I decided to use coconut gelato in this recipe because its texture and creaminess are the perfect match for these cookies. The gelato melts into the cookie, creating a unique experience where the flavors blend together beautifully without overpowering the chewy, coconut-filled cookies
In Sicily, and other parts of Italy, they have Brioche con Gelato—where a soft, buttery brioche is cut in half and filled with a scoop of fresh gelato. While our cookies aren’t as soft as the brioche, they’re buttery and nutty, thanks to the Marcona almonds and caramelized coconut baked right into the cookie. It’s a delicious twist that brings together the best of both worlds.

White Chocolate Coconut Ice Cream Cookie Sandwich (Biscotti Gelato Style!)
Ingredients
- 24 White Chocolate Mar-Coconut Cookies *Get The Recipe Here
- 1-2 pints Coconut Gelato *see notes
- shredded coconut
Instructions
- Once the cookies have cooled completely, place a scoop of coconut gelato in the center of one cookie, then gently press another cookie on top to form a delicious ice cream sandwich.
- Roll the exposed coconut gelato of the sandwich into shredded coconut to fully coat the seam and add a touch of tropical flavor.
- Repeat this until you have finished making all of the ice cream sandwiches. Be sure to put each finished sandwich inside the freezer to stay chilled while assembling the rest.
- Once all the ice cream sandwiches are assembled, store them in a freezer-safe, airtight container to keep them fresh and ready to enjoy.
