Blue Spirulina Star Ice Cubes

  • 1 cup coconut water
  • ½ cup pineapple juice
  • 2 tablespoons water
  • â…› teaspoon blue spirulina plus more as needed for color

  • 1 cup canned coconut milk shaken well
  • 2 cups cold water
  • 16 20 oz chilled 7-Up plus more for topping/preference
  • 24-32 blue star ice cubes

Instructions
 

  • Make the blue star ice cubes. In a small measuring cup or bowl, whisk together the coconut water, pineapple juice, water, and blue spirulina until fully combined. Use a squeeze bottle or dropper to fill star-shaped silicone molds. Freeze until solid, at least 4–6 hours or overnight.
  • Assemble the drinks. Add 2 tablespoons of strawberry popping boba to the bottom of each 12-ounce glass.
  • Pour about ¼ cup of coconut milk into each glass over the popping boba.
  • Add 6–8 blue star ice cubes to each glass.
  • Top with 4–5 ounces of chilled 7-Up.
  • Garnish with festive paper straws or drink picks if desired and serve immediately
