Guacamole

Guac is extra...by extra I mean it commands all the attention. Guacamole doesn't have to include a bunch of unique ingredients to stand out, on the contrary. This one keeps to a classic short list of ingredients, but without falling short on the flavor it brings. Make this Easy Guacamole recipe to put on top of Nachos with Pico De Gallo, Tacos, or as the perfect dipping mate for your favorite chips.

Easy Guacamole with a Cilantro Leaf garnish and Lime

I won't lie—like all good things, you can't rush this. The most time-consuming part of this recipe is chopping the ingredients, but trust me, it's worth it. You'll be glad you didn’t fold and grab store-bought. Taking the time to pick the ripest ingredients and letting the herbs and aromatics vibe will be well worth it.

Picking out ripe avocados is such a thing. Sometimes if I'm planning for the week ahead I'll pick up avocados that are a little on the hard side and keep them in our fruit bowl near our bananas for a couple days. Then like clockwork, I know I can expect perfect avocados right when I need them. You could use dried spices in this recipe, but if at all possible use fresh as it will elevate the flavors and freshness in every bite.

This is a great recipe to keep on hand for all sorts of occasions, use it to top Loaded Nachos for your next Super Bowl Party, as a side dish with chips to these vegetarian tacos on Cinco De Mayo or as a fresh swap for traditional veggie dip. A perfect gluten-free and dairy-free replacement.

The possibilities are endless. Sure, making guacamole from scratch takes a little extra time and planning, but once you do, you’ll never go back.

Ingredients

Guacamole is all about fresh, simple ingredients. Creamy avocados, zesty citrus, cilantro, and a pinch of salt come together for the perfect dip.

Easy Guacamole with Cilantro Leaf Garnish
  • Ripe Avocados
  • Fresh Cilantro
  • Lemon
  • Lime
  • Jalapeños
  • Shallot
  • Salt

See recipe card for quantities.

Storage

Guacamole is best enjoyed fresh, but you can keep it in the fridge for about 1-2 days stored in an airtight container. To help prevent browning, save a pit or two from your avocados and place the pits inside the Guacamole inside the airtight container. I don't remember where I got this tip, but it really works.

Ingredients

  • 3 Ripe Avocados, chopped
  • ½ cup Shallot, chopped
  • 1 Jalapeño, seeded and chopped
  • ½ cup Fresh Cilantro Leaves, chopped
  • 1 Lemon, juiced
  • 1 Lime, juiced
  • Salt

Instructions

  • Peel all of the avocaodos and discard their skins. Save the pits to the side if you think you will need them to preserve leftovers(see notes). If not discard pits as well.
  • Chop up the avocado and put them into a medium-sized bowl or molcajete. In a bowl use a fork or potato masher to evenly mash the avocado (if using the molcajete use the pestle).
  • Once the avocado is mashed and evenly smooth in texture put to the side.
  • In a smaller bowl, add the chopped shallots, cilantro and jalapeno. Drizzle about a teaspoon of fresh lemon juice and a tablespoon of fresh lime juice over top. Sprinkle with salt and stir.
  • Add the bowl of aromatics to the bowl of your smooth avocado mixture. Stir well. Season with more salt to taste and extra lime juice as needed.

Notes

-Serving size is for 4 when serving as a dip alone. If making the Guacamole to use in a layer dip or over nachos, you may want to double the recipe.
-To help prevent browning, save a pit or two from your avocados and place the pits inside the Guacamole inside the airtight container.
