Ingredients
  

  • 1½ cups pear juice/nectar
  • ½ cup cold water
  • ½ inch fresh ginger finely chopped
  • 4 -5 fresh sage leaves gently crushed
  • ½ Bartlett pear chopped
  • 1 tablespoon fresh lemon juice
  • Ice

To Finish

  • Ice
  • Mineral water, club soda, or ginger beer for a mocktail topper
  • Pear Slices and Sage Leaves for garnish
  • Prosecco for a sparkling cocktail
  • Optional spirit: 2 oz gin or vodka per drink use prosecco as the topper

Instructions
 

  • For deeper flavor, combine the pear juice, water, ginger, sage, pear, and lemon juice in a large container or gallon bag and refrigerate to infuse. Refrigerate and let infuse for 30 minutes to 1 hour. If skipping the infusion, move on to the next step.
  • Add everything directly to a cocktail shaker, gently muddle, and add ice.
  • Shake for 10–15 seconds.
  • Add ice to each glass and strain the mixture into the glasses, filling about three-quarters full to leave room for bubbles.
  • Mocktail: Top each glass with mineral water, club soda, or ginger beer.
  • Cocktail: Top each glass with prosecco
  • Garnish with a sage leaf or thin pear slices, then gently stir to combine the bubbles and flavors.
