Being the salad-loving girl that I am, I’m always looking for excuses to dress up the blank canvas of chopped lettuce with bold toppings and a custom dressing to tie it all together. This Mango Fiesta Salad—a colorful, vibrant fiesta chopped salad with fresh mango salsa and creamy Realest Fiesta Ranch—is literally a party in your mouth.

It’s called fiesta because the toppings look like festive confetti, and it doubles as a gorgeous summer salad recipe that's equally irresistible in fall or winter. Visually uplifting and texturally exciting, this Mexican-style chopped salad hits every note: crunch, creaminess, a hint of spice, and bright, tropical flavor.

Starting with a crisp lettuce base, the star is my homemade mango salsa. It’s versatile—great on tortilla chips or as a topping for nachos, delivering that sweet-spicy boost. Layer in black beans for protein, tostones for crunch, cheese for richness, and you’ve got a filling salad for dinner that stands proudly as the main dish. This Mango Fiesta Salad is a fresh, colorful chopped salad layered with mango salsa, black beans, avocado, cheese, and crispy plantain chips, all topped with creamy fiesta ranch. It’s a filling summer salad that works year-round, perfect for BBQs, Cinco de Mayo, or a vibrant weeknight dinner.

Ingredients
  

  • 1 large head romaine lettuce or 6 cups chopped greens of choice
  • 1 ½ cups mango salsa click for the recipe
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheese cheddar, Monterey Jack, or blend
  • 1 small avocado sliced
  • 1 cup tostones crispy plantains or tortilla strips
  • lime wedges for garnish

Realest Fiesta Ranch

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 –3 tablespoons milk to thin
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder optional, for a gentle heat
  • Salt and black pepper to taste

Instructions
 

  • Wash and chop the lettuce, then spread evenly onto a large platter or salad bowl.
  • Spoon mango salsa over the lettuce, then scatter on black beans, cheese, avocado slices, corn (if using), and tostones.
  • Drizzle generously with Fiesta Ranch, or serve the dressing on the side for guests to add themselves.
  • Add lime wedges to garnish and then grab your forks because it’s time to fiesta forever! 🌮🥑🌽

Realest Fiesta Ranch

  • Mix mayo, sour cream, lime juice, paprika, and seasonings. Whisk in milk to thin and chill before serving.

Notes

As a side salad → serves 4–5 people.
As a main dish → serves 2–3 people (add cilantro-lime rice or guacamole on the side to make it extra filling).
