Mango Fiesta Salad | Fresh Summer Salad Recipe That Works Year-Round
Ingredients
- 1 large head romaine lettuce or 6 cups chopped greens of choice
- 1 ½ cups mango salsa click for the recipe
- 1 cup black beans drained and rinsed
- 1 cup shredded cheese cheddar, Monterey Jack, or blend
- 1 small avocado sliced
- 1 cup tostones crispy plantains or tortilla strips
- lime wedges for garnish
Realest Fiesta Ranch
- ½ cup mayonnaise
- ½ cup sour cream
- 2 –3 tablespoons milk to thin
- 2 tablespoons fresh lime juice about 1 lime
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon chili powder optional, for a gentle heat
- Salt and black pepper to taste
Instructions
- Wash and chop the lettuce, then spread evenly onto a large platter or salad bowl.
- Spoon mango salsa over the lettuce, then scatter on black beans, cheese, avocado slices, corn (if using), and tostones.
- Drizzle generously with Fiesta Ranch, or serve the dressing on the side for guests to add themselves.
